Pancakes

Thick, fluffy American-style pancakes — a simple batter you can mix in ten minutes, stacked high with butter and maple syrup.

Method

Mix the dry ingredients

In a large bowl, whisk together the flour, sugar, baking powder and salt.

Mix the wet ingredients

In a separate jug, whisk together the milk, egg, melted butter and vanilla.

Combine

Pour the wet ingredients into the dry and whisk until just combined — a few small lumps are fine.

Rest the batter

Let the batter stand for 5 minutes while your pan heats up.

Cook

Melt a little butter in a non-stick pan over medium heat. Ladle in the batter and cook for 2–3 minutes, until bubbles form on the surface and the edges look set, then flip and cook for another 1–2 minutes until golden.

Serve

Stack the pancakes and serve warm with butter and maple syrup.

TipDon't overmix the batter — a few lumps make for fluffier pancakes, while overmixing develops the gluten and makes them tough.
