Pomodoro Sauce
A classic Italian tomato sauce — just tomatoes, garlic, olive oil and basil, simmered until it tastes like more than the sum of its parts.
Method

Cook the pasta
Bring a large pot of salted water to the boil and cook the pasta according to the packet instructions.

Soften the garlic
Meanwhile, warm the olive oil in a saucepan over medium heat and cook the garlic gently for 1 minute, until fragrant but not browned.

Build the sauce
Add the tomatoes, crushing them with a spoon as they go in. Stir in the sugar, season with salt and pepper, and simmer for 20 minutes, stirring occasionally.

Finish the sauce
Tear in the basil leaves and stir through. Taste and adjust the seasoning.

Combine and serve
Toss the drained pasta through the sauce and finish with extra basil.
TipCrushing the tomatoes by hand keeps a little texture — for a completely smooth sauce, blitz it briefly with a stick blender before adding the basil.
